Fufu with Light Soup/Palm-nut Soup

Ingredients

_Fufu:_

*Cassava

*Water

*Plantain

*Salt

_Light/Palm-nut Soup:_

* Palm nuts

* Tomatoes

* Onions

* Peppers

* Fish/Meat

* Seasoning

Preparation:

_Fufu_:

1. Peel the cassava and cut into small pieces.

2. Boil the cassava in salted water until soft and tender.

3. Drain the cassava in a colander or sieve.

4. Pound the cassava and plantains together in a mortar and pestle until smooth.

5. Add water as needed to achieve a smooth and consistent texture.

6. Roll into balls and serve.

_Light/Palm-nut Soup_:

1. For light soup: Remove the kernels of ripe palm fruits, place in a blender or food processor, add some seasoning, then grind and extract the milk using a sieve. Pour the juice in a pot and bring to boil.

2. For palm-nut soup: Wash and boil palm nuts in salted water until soft. Crack and remove the kernels, then grind into a smooth paste. Add some water and bring to boil, then strain the milk using a sieve. Pour the juice into a pot and bring to boil.

3. Add chopped tomatoes, onions, peppers, and seasoning.

4. Add fish or meat and allow to cook fully.

5. Cook until it reaches your desired consistency.

6. Serve the fufu with the light soup or palm-nut soup.

Jollof Rice:

Ingredients

* Rice

* Tomatoes

* Onions

* Peppers

* Meat (chicken, beef, or goat)

* Fish

* Seasoning

* Oil

* Water

Preparation:

1. Wash and cook rice according to package instructions.

2. Blend tomatoes, onions, and peppers into a smooth paste.

3. In a large pot or saucepan, heat oil and add the blended mixture. Allow it to cook, stirring occasionally.

4. Add the meat and cook until browned.

5. Add water, seasoning, fish, and the cooked rice.

6. Stir and allow it to simmer until rice is cooked and the sauce thickens.

7. Serve hot with fried plantains or salad.

Banku:

Ingredients

* Corn dough (fermented cornmeal)

* Water

* Salt

Preparation:

1. In a large bowl, mix the corn dough, salt, and enough water to form soft, workable dough (similar to bread dough).

2. Cover the bowl and allow it to rise for about 8-12 hours.

3. After the dough has risen, add a little more water to loosen it up.

4. Bring water to a boil in a large pot or saucepan.

5. Drop small portions of the dough into the boiling water, using your fingers or a wet spatula.

6. Allow the banku to cook until it floats to the surface.

7. Remove the cooked banku from the pot with a slotted spoon and serve with okra or tomato stew, groundnut soup, or soup of your choice.
