Ashford Castle was founded by the Anglo-Norman de Burgo family in 1228, but it became a hotel only in 2008. Located in the county of Mayo, near Loch Coirib shore, it offers luxurious rooms, and facilities that include a golf course, fly fishing tours to the nearby lake, clay-pigeon and archery lessons, as well as horse riding and falconry. Chef Stefan Matz is responsible for the restaurant, serving fresh local produce.
