Why is Judaism founded in Israel and not most other Middle east countries?

This is a misconception. Judaism is not founded in Israel. It was founded in ancient Canaan which was centered around the cities of Jerusalem and Hebron. Today Jerusalem is the capital city of Israel. During different points of history, it has also been the capital of surrounding Empires.
