Located in the Martha's Vineyard community of Vineyard Haven, Saltwater sits along Lagoon Pond, providing views of the water from the dining room. To begin the meal, the restaurant serves tuna tartar, fried cod cakes, local oysters and little neck clams, chorizo and mussel stew and lobster salad on a fried tomato. A seafood entree is the pan-roasted halibut accompanied by fava bean risotto.
Another entree is the bacon-wrapped tuna served rare with white bean cassoulet in a foie gras sauce. Saltwater is open daily for dinner from mid-June to Labor Day and closes for the rest of the year. It asks for reservations and casual business casual attire.

In August 2010 the restaurant held "Zagat" ratings of "very good to excellent for food and service and "good to very good" for decor. The raw bar's selections vary daily and include local oysters and clams as well as varieties flown in fresh from other areas. Among the seafood entrees are the Asian salmon with lo mein noodles, haddock and lobster in beurre blanc and the local dayboat sea scallops with baby spinach and mashed potatoes.
For dessert it offers the pecan bread pudding with Jack Daniel caramel sauce. The wine list features more than 100 selections. The Naked Oyster Bistro & Raw Bar serves lunch and dinner daily. It "highly suggests" reservations and recommends business casual attire. Outdoor seating on the sidewalk in front of the restaurant is available, weather permitting.
