What is a Samoan umu?
A Samoan umu is an earth oven used in traditional Samoan cuisine. It is made by digging a pit in the ground and lining it with hot coals. Food such as meat, fish, vegetables, and bread are placed on top of the coals, covered with leaves, and then covered with dirt to seal in the heat and steam. The food cooks slowly in the underground oven, resulting in a flavourful and tender meal. The Samoan umu is an important part of Samoan culture and is used for special occasions such as family gatherings and celebrations.
