Uruguay's National Dish: Asado

Asado is Uruguay's national dish—a ritualized barbecue centered on beef, but also including lamb, pork, chicken, and offal (chorizo, morcilla, sweetbreads).

How It's Done

  • Meat slow-grilled over wood/charcoal embers (not direct flame) on a parrilla (grill) or asador (vertical spit).
  • Seasoned simply with coarse salt.
  • Served with chimichurri (parsley, garlic, oregano, vinegar, oil), salads, bread, grilled vegetables.

Cultural Role

Asado is the centerpiece of family gatherings, holidays, and social bonding. It reflects Uruguay's cattle-ranching heritage and gaucho tradition. More than a meal, it's a social institution.
