Why is it impossible to sink in the dead sea?

This is not entirely true. It's possible to sink in the Dead Sea, despite having one of the highest salt contents of any body of water. The extremely high salinity does provide a buoyancy effect, making it difficult to submerge your entire body. However, if you relax completely and spread your body out, you can indeed float on the water's surface.
