Taste of Turks & Caicos: Seafood, Spice & Island Staples
The Turks and Caicos cuisine is a delicious fusion of Caribbean, Bahamian, and British influences—centered on the sea and seasoned with heat.
Seafood: The Absolute Star
- Conch (pronounced "konk"): National ingredient. Conch fritters (battered, fried), conch salad (raw, citrus-cured with peppers, onions, tomato), cracked conch (tenderized, fried, with Creole sauce)
- Lobster: Spiny (rock) lobster, grilled or thermidor (Aug–Mar season)
- Grouper & Snapper: Grilled whole, blackened, or in rundown (coconut milk stew)
- Tuna, Wahoo, Mahi: Sashimi, seared, fish tacos
Staple Sides
- Rice & Peas: Pigeon peas (gungo peas) + coconut milk, thyme, Scotch bonnet, allspice. Not kidney beans.
- Johnny Cakes: Fried cornmeal dumplings — crisp outside, fluffy inside. Breakfast or snack.
- Grits / Hominy: Corn-based, savory or sweet
Signature Dishes
- Conch Salad: Ceviche-style — lime, orange, peppers, cucumber, cilantro. "Cooked" by acid.
- Ackee & Saltfish: Jamaican import. Ackee (fruit, scrambled-egg texture) + salt cod + peppers, tomato, onion. Must be ripe ackee — unripe is toxic.
- Peas & Rice with Stewed Beans: Red beans, coconut milk, pig tail/salt beef
Tropical Fruit Bounty
- Mango (Julie, East Indian), Papaya, Soursop, Guinep, Sapodilla, Sea Grapes, Coconut (water, jelly, milk)
- Desserts: Coconut tart, guava duff, cassava cake, rum cake
Drink
Rum punch (Lucayan, Bambarra rums), Kalik/Beamish (Bahamian beers), fresh juices, bush tea (lemongrass, mint, cerasee).
