Mount Sunflower did not get its name because it resembles a giant sunflower. This is a common urban legend.
The name comes from the Helianthus annuus or sunflower plant that grows all around the mountain. The plant is native to the area, and Mount Sunflower is named for the flowers that bloomed after rainfall in and around the mountain.
