How to Cook a Pike's Peak Roast

Pike's Peak roast is a type of pot roast made from a cut of meat low on the round. This cut is tougher than most other roasts and must be cooked at a very low temperature for several hours to increase its tenderness, making this dish perfect when you're expecting to put in a long day at the office. Like other roasts, this classic slow cooker recipe can easily be customized to suit individual tastes.

Things You'll Need

  • 1 Pike's Peak roast, thawed
  • 1 can mushroom soup
  • 1 can mushroom stems and pieces
  • 1 cup beef broth
  • 2 tbsp. salt
  • 2 tbsp. dry mustard
  • 2 tbsp. dried sage
  • 1 garlic clove, diced

Instructions

      Mix the salt, dry mustard and sage together in a bowl.

      Place the thawed roast on a platter and rub the spices over the entire roast.

      Place the roast into the slow cooker.

      Mix the beef broth, mushroom soup, mushrooms and diced garlic together in a separate bowl. Make sure the ingredients are combined well.

      Pour the mixture over the roast.

      Place the lid on the crock pot, plug it in and turn the heat setting to low. Allow the roast to cook for approximately 10 hours.

      Turn off the slow cooker, remove the lid and allow the roast to cool for approximately 10 minutes before serving.
