New York Egg Cream: No Egg, No Cream—Just Seltzer, Chocolate, Milk
The New York egg cream is a beloved fountain drink that contains neither eggs nor cream.
The Classic Formula
- 1/2 cup cold seltzer (freshly dispensed, highly carbonated).
- 1–2 oz chocolate syrup (Fox's U-bet is canonical).
- Splash of whole milk (1–2 tbsp).
Method
- Pour syrup into tall glass.
- Add milk.
- Tilt glass; slowly pour seltzer down side to create foam head.
- Stir gently with spoon. Drink immediately.
Origins (Debated)
- Lower East Side Jewish immigrants, 1880s–1900s.
- Possible Yiddish "echt keem" (pure sweetness) → "egg cream."
- Or "grade A cream" → "egg cream" corruption.
- Never contained egg/cream—always a poor man's soda fountain treat.
