Start a list of items you'll need for your trip. Keep it posted so you can add to it when you think of things.
If you are going to a place where you will need a passport, make sure everything is up to date.
Do research on the place you are traveling to. Get information on tours, shows, etc. that you may want to do.
Check that you have travel insurance.
Check luggage for rips, tears, holes, etc. If need be, buy new luggage.
Get traveler's checks. Don't exchange all your money at this point; keep some for any expenses acquired at the airport prior to departure. In some cases you can get a better exchange rate at the place you are visiting so you may wish to keep some for that.
Start packing. This is especially helpful if you have to pack for another person or kids. Pack items that you will not need for the rest of the week.
Make piles of the items you'll need for your trip but don't want to pack away just yet. Try to keep everything in one spot (this will make it easier when you have to finish packing; there's nothing like running around at the last minute looking for something!).
Cancel or put a hold on your newspaper delivery.
Confirm dates and times with house/pet sitter (if any).
If you are having someone drive you to the airport (and/or pick you up), confirm dates and times.
Double-check flight information.
Print off boarding passes.
Finish any last-minute packing.
