Founded in the 1880s as a farming town, Boulder, Utah, is along Highway 12 near the Anasazi State Park and Capitol Reef National Park. With the roads to the town finally paved in 1985, Boulder was the last place in the United States to receive postal delivery by mule. Appreciated for its natural beauty among the mountains, the area that was once the most isolated in Utah is now a draw for its hiking, fishing and hunting.

Using locally grown, organic produce from its nearby farm, the restaurant also sources beef, lamb, eggs and honey from Boulder. Open since 2000, the restaurant is family-friendly, offering crayons to their young patrons. Sample menu items diners may find on the seasonally changing menu include chipotle meatloaf, tequila-lime chicken, pumpkin and apple soup, organic chicken with stone fruit barbecue sauce, green chili macaroni and cheese, Utah goat cheese fondue, rattlesnake bean dip, roasted red pepper bisque and steaks. Utah microbrewed beer and organic wines are also available at the eatery. Special events at Hell's Backbone include seasonal ice cream socials and visits from the Drepung Loseling Monastery monks. Located on the same grounds as the Boulder Mountain Lodge, the restaurant highly recommends making reservations during dinner hours. Open seasonally, from the middle of March until Thanksgiving, Hell's Backbone serves breakfast and dinner daily, as well as offering take out lunches.
