    • The Red Lion Restaurant has been serving game meat for a nearly half a century. In fact, the restaurant offers seven different game entrees nightly to go along with its traditional steak and seafood. The wild game menu includes bison, wild boar and elk, as well as more traditional fare such duck and lamb, and seafood such as trout, salmon, lobster and shrimp. Other unique fare includes escargot, and Bavarian schnitzel (breaded pork). The restaurant is particularly known for its cuts of bison, ranging from sirloin to a flat-iron cut. Select gourmet cheeses compliment many dishes, and game meat is often prepared in a variety of ways, from smoked to sausage-style. Between three and five dinner specials are offered daily. The restaurant can also accommodate large groups such as weddings.

    The Greenbriar Inn‎

    • The Greenbriar Inn dates back to the late 18th century, and offers both restaurant and banquet facilities. Wild game dishes include rabbit loin, braised pork belly and bison short ribs, as well as classic dishes such as rack of lamb, breast of duck, filet mignon and foie gras. Seafood includes grouper, salmon and even Maine lobster. The restaurant also features produce that is locally grown and harvested. A Sunday brunch is offered, which includes prime rib, oysters and turkey, and is served in both the patio and bar area. An extensive wine list is available.

    Buckhorn Exchange Restaurant‎

    • Located just 30 minutes south of Boulder in Denver, the Buckhorn Exchange Restaurant offers elk, quail and buffalo on its menu. Diners will discover the buffalo Reuben, broiled elk, as well as buffalo burgers. Traditional favorites include Cornish game hen, baby-back ribs, grilled salmon, bratwurst, Colorado-raised lamb and a smoked turkey sandwich.
