Ibiza is a contemporary Spanish restaurant, fusing classic Spanish dishes with international influences. The menu is heavily oriented toward seafood, presented by Executive Chef Manuel Romero, born in Spain and previously employed at the Hyatt in New York. Appetizers include oysters, grilled octopus salad, baby squid cooked in its own ink and marinaded anchovies in addition to a variety of garden salads and rice dishes. Seafood entrees include codfish confit and grilled red snapper; rack of lamb, chicken, steak and grilled vegetables are also available. Paella, a traditional Spanish dish, is one of Ibiza's specialties; only served on Tuesdays, a list of paellas incorporate fish, shellfish, squid and octopus along with additional meats like pork, chicken and sausage, tossed with either rice or noodles and vegetables. Sage American Grill and Oyster Bar serves up classic American grill dishes as well as fresh seafood and raw items. Seafood appetizers include clams casino, shrimp cocktail, lobster rolls, fried calamari and a smoked salmon plate. Clam chowder and lobster bisque are featured soups. From the raw bar, Sage has a variety of freshly shucked oysters and clams on the half shell. Dinner entrees feature mixed grills with surf and turf dishes. The lobster bake entree, for example, features a half New England lobster, shrimp, mussels, chicken sausage, corn on the cob and linguine in a seafood broth. Castaways Seafood Restaurant specializes in fresh grilled fish as well as fried rolls and appetizers. Dine inside in a casual, family-friendly environment or alfresco style on the outside deck; there is a small, isolated smoking section outdoors for smokers.
