Dry Aged Steak Restaurants in Missouri

Though it's a process only successfully applied to prime grade, well-marbled beef, dry-aging enhances the tenderness and flavor of beef. Approximately 20 percent of the original weight of the meat is lost during the process, which takes place over seven to 21 days, making this process expensive and a challenge even for restaurants. Missouri is home to several steak restaurants that serve dry-aged beef.

  1. The Capital Grille

    • With a club-like atmosphere, The Capital Grill in Kansas City, Missouri serves dry-aged, hand-cut steaks in various cuts such as sirloin, porterhouse, filet mignon, and Delmonico. It is open for lunch Monday through Friday, and dinner seven days a week. Patrons may also enjoy Sunday night jazz in the lounge. Other menu items include broiled lobster, sesame seared tuna, roasted chicken and lamb chops. Side offerings include sauteed spinach, Parmesan truffle fries, onion rings, lobster macaroni and cheese. The restaurant prides itself on it's extensive wine selection to pair with the dry-aged steaks and offers over 350 wines on the menu. Larger parties can take advantage of five different dining rooms seating from eight to 65 guests.

    Flame Steakhouse

    • Located in Springfield, Missouri, Flame Steakhouse dry-ages steaks in their dry-aging room with Himalayan salt for 21 to 45 days after 21 days of wet aging. Cuts offered includes filet mignon, rib-eye, porterhouse, and Kansas City strip. Steaks are served with a selection of sauces: the restaurant's own steak sauce, a Bearnaise sauce and a chimichurri sauce. Guests may choose from a variety of sides. Flame Steakhouse also serves a variety of seafood dishes, including lobster tails, and offers over 400 selections of wines. Happy hour is Monday through Saturday in the restaurant's Red Room.

    The Majestic Restaurant

    • Housed in a historic building built in 1911, the Majestic Restaurant offers live jazz daily. Dry aged steak options include porterhouse, T-bone, prime rib, Kansas City strip and rib-eye. Open seven days a week, the Majestic Restaurant offers a menu that includes other dishes such as Cobb salad, Fench dip, pork tenderloin and lamp chops. The French-influenced menu items are a result of owners' Frank and Jolyn's experience living in France. The restaurant's daily happy hour from 2 p.m to 6 p.m. includes a broad selection of small plates, select wines and martinis for $5 as of August 2010.
