Take mostly non-perishable items. Keeping meats and egg or dairy items at the proper temperature in the wilderness is difficult and they can spoil easily. Eat the perishable foods you do take in the first few days of your trip.
Bring food that can be cooked in one pan and without lots of additional ingredients. Oatmeal, pasta, instant rice and some varieties of soup are great one-pot choices that only require water for cooking.
Include portable snacks like fruit and granola bars. These are quick and easy to eat and can be taken on hikes and other outings.
Consider pre-cooked meats such as sliced deli meats or canned tuna for lunch. They're quick to prepare, and you don't have to start the grill or light the campfire.
Choose fresh vegetables like potatoes, corn or bell peppers as an accompaniment to dinner. They're easy to store and don't take up space in the cooler. They can be cooked right on the grill without much preparation.
